Stabilizers (often referred to as “gums” or “pectins” in a general manner) are additives substances that are added to the drinks with the aim of improving shelf life and flavor release.
The most commonly used are: Guar gum (E412); Xanthan gum (E415); Carboxymethylcellulose (E466); conventional pectins (E440i).
